Agriculture: Seven new market specialties included on list of Romanian traditional produce
The Ministry of Agriculture and Rural Development granted seven additional approvals for traditional Romanian produce from Galati, Caras-Severin and Buzau counties.
In Galati, Verdei & Co received approvals for four traditional produce obtained from pork meat coming from their own farms: Ilinca pork fillet, Zamfir pork chops, Ilinca smoked ribs, Ignat pork sausages.
Illinca pork fillet is a specific recipe which supposes cooking through maturation and spicing before smoking.
Zamfir pork chops are obtained from pork chops matured with spices for 6-14 days to obtain produce with special taste.
Ilinca smoked ribs are obtained through maturation for 6-14 days in sauce with traditional spices and salt, according to a 25 years old recipe.
Ignat pork sausages are made from pork meat, pork fat, salt, natural spices and undergo smoking operations.
Caras Severin got the name of traditional produce for Soceni goat meat sausages, made from fresh goat and pork meat obtained from local farms and smoked naturally.
In Buzau county, the traditional produce approval was received for Casa Ramniceana salami and sausages.
Salami is made from pork and beef meat according to an authentic recipe and all processing operations are manual. The combination of the two types of meat smoked in the end point out the traditional value of the finished product.
Casa Ramniceana sausages are made from pork and mutton produced by local farmers and smoked in the end.
